And indeed, his company's commitment to quality and customer satisfaction paid off.

However, as the business grew, so did its complexity. Rimmels soon found himself juggling multiple locations and staff, which led him to explore franchising opportunities. He discovered that by taking a smaller piece of sales, he could empower others to open their own units while still maintaining control over the brand's integrity. This approach not only allowed for greater decentralization but also encouraged ownership mentality among his team members.

Sadly, despite its success, Pennsy Food Hall will soon be closing its doors forever. The beloved vendor, The Cinnamon Snail, which offered vegan and organic options like kimchi tater tots, won't be reopening in a new location. Another popular vendor, the Beastmode Burger Deluxe food truck, will also cease operations.

The closure is attributed to Vornado Realty Trust's plan to invest $2 billion in renovations around Penn Station, transforming the area into 145,000 square feet of office space. This move may bring in more revenue for the company but comes at a cost - the loss of an iconic food destination that has become synonymous with Penn Station.
